Unfortunately, I am alone this Thanksgiving. Adam is off at a training camp and Norwegians, of course, don’t celebrate a Thanksgiving. So this year it will be me, myself and I. (Don’t feel bad tho – I’ll treat myself with some chick-flicks and bake up a storm, maybe.)
But since Canadian Thanksgiving is THIS weekend and American Thanksgiving is just around the corner. You’re all busy (rightly so). And I thought, hey. I have allll this time by myself. Why don’t I put together a list of the best pumpkin recipes, ever?!
And so that’s what I’ve done. I’ve also tried to find pumpkin recipes that are pretty healthy. So you don’t have to worry about additives or flavorings that are completely unnecessary and detract from such a great ingredient.
